CHE FIGATA (ARISTA HOTEL) – Nashville, TN

The Arista Hotel has 130 luxury-level rooms, an acclaimed restaurant, and a 300-person banquet room. The principals of S2O Consultants, Inc. were retained to program and design the food and laundry facilities. The 3,000-square foot kitchen is divided into contiguous, complimentary zones for storage, rough preparation, banquet cooking, restaurant cooking, room service support and warewashing. We worked closely with the DuPage County Department of Environmental Services throughout the planning process to make sure all the spaces were properly sized and had the correct finishes to promote sanitation.

The 1,000 square foot laundry operation washes, dries and presses all the towels and bed linen for the hotel rooms. It is laid out for proper flow with no cross-traffic, and is located immediately adjacent to the housekeeping department.

In 2017, S2O was re-engaged to renovate and revise the restaurant.  Working with Chef Mark Grimes and the hotel owners, Che Figata was realized and opened in Spring of 2018.  Located within the CityGate Centre office-hotel complex, The 275-seat restaurant (that number includes the lounge and outdoor seating) opened in Spring of 2018. “Che Figata is millennial slang for something that’s totally cool, or totally awesome.  A modern Italian restaurant that pays homage to the Italian table, it includes an open kitchen, all Italian wine list and a retail market.

A few of the highlights-The open kitchen includes a special wood-burning grill for grilled fish and other proteins; a wood fired-pizza oven that will produce Roman-style pizzas, and an imported pasta-maker.
