Kristin began her career in food service management. After gaining hands on experience in the industry, she entered the consulting industry and quickly became known for her personal drive, ability to learn quickly and strong personal skills. She, along with fellow partner Harry Schildkraut, left the company to form S2O Consultants. After 22 years of partnership, in 2025, Kristin became 100% owner. In January of 2026, the succession planning began with Ryan Rongo obtaining a small part in ownership of the firm. As of 2026, the company has grown to a firm of 13 and is recognized as one of the top firms in the world for Sports facility design.
S2O continues to provide a broad range of specialized consulting services to the Sports, Corporate, Educational and Hospitality industries in the area of food service. She is both a facilities designer and operational consultant.
Key projects have included renovations to the New Orleans Superdome, starting in 2005 after Hurricane Katrina up to the current renovations slated for completion in 2025, LAFC-new soccer stadium in Los Angeles, working on the renovations to the United Center, home of her favorites, the Chicago Bulls and the Blackhawks and multiple projects at Churchill Downs, Home of the Kentucky Derby.
Kristin resides in the city of Chicago and Florida. She enjoys dining out and traveling with friends and her 2 adult children.

A specialist in kitchen equipment design, Ryan primarily serves professional and collegiate sports facilities and also works with K–12 and corporate clients. He leverages field experience and technical insight to deliver durable, code-compliant, and operationally efficient designs that meet high-volume performance demands.
Ryan is an FCSI professional member and minority owner, holds LEED professional credentials, and completed bachelor-level studies at DeVry University. He partners with clients to align design strategy with budget, schedule, sustainability goals, and long-term maintainability, ensuring facilities perform reliably from opening through years of service.
Ryan resides in the city of St. Charles, IL, with his spouse Kaylee and their dog, Holly.

Harry entered into the food service industry in 1969 as a consultant for Cini-Little International. He became proficient in all aspects of the food service industry and rose to the position of Principal and Vice President. Harry left the organization in 2003 to establish Schildkraut, Schroeder, Sedej & Associates along with current partner, Kristin Sedej. After the firm dissolved in 2008, Harry and Kristin formed their current company, S2O Consultants, Inc.
Key projects have included the new Indianapolis Colts Lucas Oil Stadium – which was named the Sports Facility of the Year by Street and Smith’s Sports Business Journal, winning project of the month from FE&S Magazine for the new dining pavilion at Ravinia Festival, renovations to the New Orleans Superdome after Hurricane Katrina, receiving the LEED Gold certification for work done on the HSBC North America Headquarters, and working on designing food service facilities for the first LEED-certified green major professional sports stadium in the U.S. – the new Nationals Ballpark in D.C.
Known for his extensive business background, Harry has delivered lectures for a number of organizations including the International Association of Amusement Parks and Attractions, American Hotel and Motel Association, Harold Washington College, and DuPage County Community College. He is also a professional member of the Foodservice Consultants Society International, National Fire Protection Association, and the Cornell Hotel Society.
Harry has done extensive pro-bono work for the United Methodist Church in Barrington, Ronald McDonald House in Chicago and the Salvation Army Recreation Center. He also has served as Chair of the Architectural Review Commission for the Village of Hawthorn Woods, Illinois for the past 17 years. Harry enjoys a lifelong hobby of model railroading.

Peg Galie began her career in the foodservice industry at the age of 14 as a dishwasher and continued to work in foodservice as a server, bartender, cook and front-end manager. She has also been involved in residential construction. That changed in 2008 during the great recession when she joined a health care company. During her time in the health care industry, she worked part-time for S2O reviewing plans and specifications. She joined S2O in 2014 and has worked her way up through prior to becoming a project manager with S2O Consultants.
As project manager, Peg has worked on numerous large venue projects including professional and collegiate sports venues, hotels, K-12 schools, health care, corporate dining, and higher education facilities. Peg is an FCSI Professional Member.
Peg resides in the city of McHenry with her dog. She loves to travel and spend time with her grandchildren and family.

Joe began his foodservice consulting career with Cini-Little and has worked with other firms managing projects in hospitality, healthcare, sports venues, and amusement and entertainment. Some of Joe’s notable projects have been Volcano Bay water park at Universal Orlando, the Arizona Cardinals Stadium, the Hard Rock Hotel and Casino in Atlantic City, and various restaurant projects in the US and Europe.
Joe serves his community as a volunteer with the Civil, Air Patrol, the auxiliary of the USAF. He is a Group Commander, overseeing the operations of fourteen squadrons and holds the rank of Major. He lives in Tampa, Florida.

Amber’s expertise in AutoCAD and Revit drawing production, BIM creation, MEP, Architectural Coordination, and onsite surveying makes her a vital member of the S2O team.
Amber Kennedy began her career in the foodservice industry at age 16 working as a cook/cashier for McDonald’s, a server at an Oyster Shucking Bar and a line cook at multiple family restaurants; all in the Kissimmee, Florida area. She joined S2O
in 2012 and has worked her way up to Senior Project Coordinator/Revit Technician with S2O Consultants. Amber resides in the city of McHenry, IL with her husband and son.
